Protecting websites from Google

As more and more website templates are used, the more often I am seeing websites calling Google for analytics, fonts, capchas, maps, docs, even accounting data; just about everything a web site can do is via Google!
It's no news that many people opt to use do-not-track, anonymizers, and blockers for Google, Facebook, Twitter ad nauseum and other 3rd party spies.
Yes - I heard it from those assimilated with Google that Google is the second coming and can turn water in to wine; but at what risk to my clients customers privacy?
Am I wrong to assume Google, and the others, are really offering up all the goodies absolutely free? Or is the "free" use of off-site bells and whistles at the sites visitor's expense?

Data mining is the name of the game. Google is monetizing your traffic in exchange for using their otherwise free services.

google Free = Advertise on search engines, youtube, gmail and other web applications or services.
